Hi, I’m Ruben Espino a.k.a. Affe Stiller, founder of La Dieta Mexicana, I have always been passionate about healthy living. I spent years researching and studying the best practices for leading a long and healthy lifestyle, reading over 100 books on longevity. It was during this time that I came up with an innovative idea that would later become known as La Dieta Mexicana.
After poring through books such as The Blue Zones, The Longevity Diet, How not to Die, Younger You, Rewind your Body Clock, and Eat This and Live, I began to notice a common theme - a diet rich in natural, whole foods was the key to a long, healthy life.
The next "aha" moment occurred while I was reading the book about the blue zones. I realized that all five regions mentioned in the book - Japan, Italy, Costa Rica, Greece, and California - have something in common in their diets: they eat real food!
This got me thinking that every region in the world must have its own unique real food, including my region of Mexico.
As I delved deeper into the research, I came to the conclusion that the traditional Mexican diet, which emphasizes fresh vegetables, fruits, legumes, and whole grains, was one of the healthiest diets in the world. This is how the La Dieta Mexicana was born - a celebration of the real, whole foods that have sustained Mexican people for centuries.
Inspired by this realization, I set out to create a movement that would promote the benefits of the Mexican diet to people in my community. I founded La Dieta Mexicana and Cocina Saludable el Eden, a movement that celebrates the traditional Mexican Healthy Diet and educates people on how to incorporate it into their daily lives.
